J & J OSTROŽOVIČ · MAKOVISKO VINEYARD · 2007
A wine that keeps something for the next sip.
Black coffee and dark chocolate. Then roses and a honeyed finish. The 2007 five-puttonyos selection invites you to slow down and follow its character as it unfolds.
Its story begins in Slovak Tokaj, in the Makovisko vineyard. In the glass, it continues with an expressive interpretation of traditional Tokaj winemaking, including the distinctive bread-like note known as ‘chlebovinka’.

MAKOVISKO VINEYARD
Where the story begins.
Makovisko is one of the vineyard sites where J & J Ostrožovič grows grapes in the Slovak part of Tokaj. Its hillside is characterised by an exceptionally warm, dry environment.
The site is also home to rare butterflies and moths: the southern festoon and the giant peacock moth. Behind the name on the label lies a particular landscape, its natural conditions and the daily work in the vineyard.
THE SECRET OF TOKAJ SELECTION WINES
Small berries. Remarkable richness.
When autumn sunshine meets morning mists and the conditions are right, noble rot, Botrytis cinerea, can develop on ripening grapes. The berries lose water and become cibéby: raisined grapes in which sugars and aromatic compounds are concentrated.
In traditional Tokaj selection winemaking, hand-picked cibéby are processed and soaked in Tokaj must or wine. Their richness passes into the developing wine, which is then matured.
What does five puttonyos mean?
A puttony was a wooden container used to collect cibéby, raisined grapes formed through the action of noble rot. One held approximately 25–30 kg of these precious berries.
Traditionally, a five-puttonyos selection used five such containers of cibéby for 136 litres of Tokaj must or wine: the volume of one Gönc barrel. To put this in perspective, five containers represented approximately 125–150 kg of cibéby.
The number of containers thus expressed the proportion of cibéby used in production. The more berries were added, the more concentrated sugars and aromatic compounds they could contribute to the wine.
Other harvesting containers have replaced the wooden puttony today, but the name lives on. The designation 5 puttonyos recalls this traditional method of production; it does not indicate years of ageing or bottle size.
